A popular Indian vegetarian meal made with rice, veggies, and spices in which the curry is layered with semi-cooked rice and later dum-cooked.

Prep
Finely chop cauliflower, onion, carrots and potatoes.
Cooking
Heat oil in a pot, add chopped onions and saute.
Add bay leaf, cinnamon, star anise and cardamom followed by ginger garlic paste and cook.
Add chopped carrots, cauliflower, peas, and potatoes and mix well.
Add red chilli powder, black pepper, salt, kewra water and biryani masala and cook for a while.
Put a layer of cooked rice in a bowl, add the veggies and repeat the process.
Garnish with crisp onions and serve.
