A wholesome and nutritious dish made by combining cooked brown rice with tofu, a soy-based protein source, along with vegetables and seasonings.

Cooking
Heat the olive oil in a large skillet or wok over medium-high heat, add garlic, ginger, and red chilli flakes and stir-fry for about 30 seconds.
Add tofu and stir-fry until golden brown for about 2 minutes.
Add red and yellow bell peppers; cook, stirring, until peppers are crisp-tender for about 3 minutes.
Add rice and soy sauce; cook, stirring occasionally, until rice is heated through, about 3 minutes.
Add sesame oil, salt and pepper; and garnish with spring onion.
