A vibrant & nutritious salad made using quinoa, mixed veggies and fresh lime dressing all put together!

Prep
Boil the corn kernels, soaked black beans, and quinoa (separately) in salted water until cooked. Drain and set aside.
Dice the tomatoes and Persian cucumbers.
Chop the Jalapeno peppers, red onion, red bell pepper (capsicum), mango, avocado, and coriander leaves.
For the dressing, whisk together extra virgin olive oil, salt, lemon juice, and black pepper powder in a small bowl. Set aside.
Cooking
In a large bowl, combine cooked quinoa, cooked black beans, cooked corn kernels, tomatoes, cucumbers, Jalapeño peppers, red onion, red bell pepper (capsicum), avocado, and coriander leaves.
Pour the prepared dressing over the salad and mix well to coat everything evenly.
Chill and serve.
