A popular Maharashtrian dish made with flattened rice (poha) cooked with onions, mustard seeds, curry leaves, turmeric, and garnished with coriander leaves, creating a light and flavorful breakfast or snack option.

Prep
Rinse thick poha under running water until soft and leave the softened poha in the strainer.
Cut the veggies - onions, potatoes and green chilies.
Cooking
Heat oil in a pan and temper mustard seeds and cumin seeds (jeera). Once they crackle, add the curry leaves and minced green chilies and saute for 10 seconds on medium flame.
Add peanuts and fry them for a minute.
Add the potatoes along with little salt and cook till they turn soft. This could take 4-5 minutes.
Add the chopped onions and cook till they turn translucent. This could take 2-3 minutes.
Add turmeric powder and mix.
Add the softened poha to the pan along with salt and sugar and give it all a good mix giving poha a yellow hue. Cook for a minute and take it off the flame.
Garnish with chopped cilantro and lemon juice. Mix it well. Cover the pan with a lid and let it sit for 2-3 minutes (with the gas turned off).
