A delicious side dish made with roasted beets that has a sweet, earthy and aromatic flavour.
Beetroot
3 medium
Extra Virgin Olive Oil
1 tbsp
Salt

Black Pepper Powder

Prep
Boil the washed beetroot until soft and tender
Once the beets are tender, drain them, and once cooled down peel them, cut them into small cubes, and place in a bowl.
For the dressing, whisk extra virgin olive oil, salt, black pepper, and cider vinegar in a small bowl.
Add chopped celery, and shallot, to the dressing and mix well. Set aside.
Cooking
Pour the prepared dressing on the beetroot, toss well and serve,
