Step-by-step instructions to cook

Prep

Wash basmati rice till the water runs clear and soak exactly for 30 minutes in enough water. Drain in a colander.

Wash, peel, and chop potatoes into bite-sized cubes, and set aside.

Slice the onions and set aside.

Cooking

Heat ghee in a pressure cooker and add black pepper, cardamom, mace, cinnamon, black cardamom, cloves, star anise, and bay leaf and let it splutter.

Add sliced onions and salt and fry until golden.

Add ginger garlic paste and saute until its raw smell disappears.

Add potatoes and peas and mix well.

Add cumin powder (jeera powder), coriander powder, turmeric powder, and garam masala and mix properly.

Sprinkle some water and saute for 2-3 mins.

Add the measured water and soaked rice and gently mix.

Pressure cook on high flame for 2 whistles.

Once the pressure is released, open and gently fluff with a fork. Serve hot
