A popular Indian vegetarian dish that is made with potatoes and cauliflower in a flavourful gravy of onions, tomatoes, and spices.

Prep
Cut cauliflower into small pieces.
Chop the potatoes into bite-sized chunks similar to the size of the cauliflower pieces.
Finely dice onions and chop tomatoes.
Cooking
Heat oil in a large pan over medium heat.
Add cumin seeds (jeera) and sauté for 1 minute until fragrant.
Add finely diced onions and cook for 3 to 4 minutes until they turn golden brown and soften.
Add the chopped tomatoes and cook for an additional 5 minutes until they become soft.
Stir in the red chili powder, garam masala, salt, and turmeric powder. Cook the spices for 3 to 4 minutes, adding water as needed to prevent burning.
Add the chopped potatoes and cauliflower to the pan and cook for 15 to 20 minutes until both the cauliflower and potatoes are soft and fully cooked.
